How We Got Here

In the year 1979, there was only one Iranian grocery store, called "Attari" in Westwood, California. Mrs. Hendessi presented her baked goods to the Persian community, as the result of her urging friends and family.


Mrs. Hendessi was born and raised in Torbat Heidarieh, Khorasan, in reputable family who owned the Electric Company of the city. As a child, she was curious, talented, and strong willed. She wanted to learn new things and be the best at everything.


While she was young, Mrs. Hendessi's family would visit villages in rural areas. During her visits, she would hold conversations with the sheepherders' wives, who were busy making everything that could be made from sheep milk- the yogurt, cheese and "Kashk". She learned all of this at a very young age, and never used the knowledge until later in life when she traveled to the U.S.


At first, Kashk was a side project to Mrs. Hendessi's original food production of baked goods, jams, relishes, and Persian cookies. Soon thereafter, the production of Kashk morphed into a passion and family effort.


Mrs. Hendessi has always been a perfectionist who understands the chemistry of food. She has always emphasized on using only the best quality ingredients. The Grade A wholesome milk with no hormones is pasteurized twice, in our dairy. Kashk is cultured under the most sanitized environment. The process takes over one month. There are no preservatives, additives or extra ingredients in the Kashk besides pure milk.


Mrs. Hendessi states, "I am thrilled that my products are enjoyed by a majority of the Iranian population. Over the past 30 years, we have not sacrificed the quality of our ingredients to maximize profit. "

The History of Kashk

Dating back centuries ago, without modern refrigeration and cooking, the people of Persia had to come up with their own ways of preservation of food. These techniques helped prevent spoilage and waste.

Dairy was one of the main sources of nutrition in ancient cultures. Since Persians had plentiful dairy, they instituted a way to preserve it for their needs.


Persian herders conserved milk by transforming it to a staple food called Kashk for centuries. Kashk had a shelf life of a very long time; it was dry, safe, and healthy. This innovation enabled the Persian herders to extend their way of life and culture to many different ethnic groups and regions.


The end result:


A delicious, appetizing dairy product that is essential to many soups and dishes. It is part of Iranian, Afghan, Kurdish, and Arab diets.


Kashk is a hard, dried, cheese-like dairy product that is made into liquid to be used in cooking.
